I’ve developed my free-from recipes with cake texture at the top of my list. Gluten-free cakes can often be dry or starchy and so I make all my free-from cakes using my own blend of different gluten-free flours, ground nuts or coconut. For me local Organic eggs from the happiest hens are the secret to these bakes. Using ground almonds also adds richness and depth of flavour to these bakes.

* I bake my gluten-free cakes separately from my regular bakes to avoid cross-contamination but my Mill kitchen is NOT a gluten-free baking environment


Flourless Almond Tortes (GF, DF)

These moist and sticky tortes keep well and pair perfectly with seasonal berries.

 

  • Chocolate Almond & Whole Orange — A dark, rich torte made with whole oranges and swirled with chocolate almond ganache

  • Chocolate Olive Oil & Almond Torte — An incredible ‘brownie’ like texture with a nutty flavour – perfect with pear and ganache and berries

  • Chocolate & Pear Torte — A perfect pairing, not overly sweet but intensely chocolatey

  • Whole Orange & Almond Torte — A middle eastern classic that is great with cardamom or rosemary

  • Pear, Pistachio & Rose Cake — A fragrant, floral almond and pistachio torte packed with whole pears

  • Raspberry, Rose & Pistachio Love Cake — Full of fresh raspberries, soured cream and with just a hint of rose. Perfect on its own or slathered in vegan buttercream! Also amazing made with rhubarb or strawberry

  • Persian Love Cake — An aromatic almond and honey sponge with middle eastern notes of rose and cardamom and a hint of citrus

  • Raspberry, White Chocolate Cake — almond sponges dotted with raspberries and chunks of creamy white chocolate. Best served with white chocolate ganache

  • Lemon, Almond & Pistachio Syrup Cake — A light and sticky zesty almond drizzle cake, pairs beautifully with blueberries, poppyseeds or lavender in the summer!

  • Vanilla Chai Latte & Apple Cake — made with whole aromatic chai masala spices and soft chunks of fresh apple

  • Cherry, Almond, Pistachio & Coconut Cake — A denser texture, full of nuts and fresh cherries

  • Apricot, Walnut, & Lavender Torte — Summery cake made with ground walnuts and almonds, chunks of fresh apricot, lavender buds and drizzled with a zesty lemony drizzle
